麻婆豆腐的做法

辣子鸡的做法

做好麻婆豆腐几要点:

1.用剪子将豆腐盒子底部的2个角剪出小口,这样可使倒出来的豆腐保持完整不碎。
 
   2.豆腐焯水时在沸水中加少许盐,不但可以去除豆腥味,还可以保持豆腐质地软嫩。
 
   3.炒豆瓣酱时要用中火,切勿将豆瓣酱炒糊而影响口味。
 
   4.为了防止豆腐出水,勾芡是最好勾两次,第一次在加入清水后,第二次在加入盐、糖、鸡精后。
 
   5.菜中的猪肉馅也可以用牛肉馅替代,也可以什么肉都不放。

today i go to buy a bowl of chicken soup.
then add some glutinous rice wine, sugar n some ginger, cook it for a while. just done....:-)

i had enjoyed it which my uncle cooked at Fresno, Ca last time we visited.
